Black Bean Burgers
When the side ingredient takes center stage.
We are huge fans of black beans, and what's better than black beans? Black Bean Burgers! We discovered this recipe years ago in one of the kits from Em's Raddish Kids subscription. It's been a family favorite ever since. They are so easy and so good, and they are a perfect alternative when the weather doesn't cooperate for grilling outdoors.
Ingredients
1 (15 oz.) can black beans
½ tsp ground cumin
½ tsp chili powder
¼ tsp garlic powder
¼ tsp salt
1 TBSP flour
2 tsp Worcestershire sauce
1 egg
¼ cup panko breadcrumbs
¼ cup vegetable oil (I use less)
4 slices cheese
4 burger buns
Lettuce, tomato, onion (favorite burger toppings)
Instructions
Drain and rinse black beans. Line a baking sheet with paper towels. Add beans and let dry for 10 minutes.
Add cumin, chili powder, garlic powder, salt, flour and Worcestershire sauce to a mixing bowl.
Add beans to the spice mixture. Mash just until beans are broken into small pieces. Mixture should be chunky, not smooth.
Whisk egg in a small bowl.
Add breadcrumbs and egg to bean mixture. Stir to combine.
Divide mixture into 4 equal balls. Gently form into patties on wax paper. Preheat oil in a large skillet. Carefully add patties.
Cook for 5 minutes, until browned. Turn and cook for another 4-5 minutes. Melt cheese on top.
Ideas
Take these burgers to the next level with Sir Kensington's Sriracha Mayo. This mayo is fantastic and gets bonus points because it's soy free.
Double the recipe (omitting the cheese), so you can quickly heat up the patty and add cheese the next day. It's also great crumbled up and added to a taco bowl for lunch.
