Chicken Chow Mein
Dinner in 30 minutes
We love Asian food. I make a lot of fried rice, but I absolutely love chow mein. I was so excited when I found this recipe to try, and it did not disappoint.
Ingredients
1 lb chicken breasts or tenders (chopped)
1-2 Tablespoon olive oil
14 oz lo mein noodles
2 cups cabbage, chopped
1 cup shredded carrots
1 bunch green onions, chopped
2 garlic cloves, minced
Salt & Pepper to taste
Chow Mein Sauce
1 1/2 Tablespoons oyster sauce
1 1/2 Tablespoons soy sauce
1 1/2 Tablespoons light sesame oil
1/4 cup vegetable stock
1/2 Tablespoon cornstarch
1/2 Tablespoon granulated sugar
Instructions
In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
Cook your noodles according to package instructions then drain and set aside.
Heat a large wok or pan with olive oil over medium-heat. Cook your chicken in the oil until golden brown, seasoning with salt and pepper. Remove chicken and set aside.
Add carrots, cabbage and pressed garlic to heated skillet and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
Add chicken and noodles back into the pan.
Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
Garnish your chow mein with chopped green onions and serve.
Ideas
I did all the chopping prep earlier in the afternoon, so when it was time to cook dinner everything was ready to go.
I typically don't like a lot of sauce, so I modified the original recipe to half the sauce. If you like a lot, double all the ingredients for the sauce.
