Chicken & Spinach Tortellini
creamy sun-dried tomato pesto sauce
When looking for new recipes to try, I like to find the ones that combine things we already love. I've also really been wanting tortellini, so when I saw this recipe, I knew I could put my spin on it for something amazing. It was so good!
Ingredients
1 19oz package cheese tortellini
Chicken
2 Tablespoons olive oil
1 1/2 lbs boneless, skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Sun-dried Tomato Pesto Sauce
2 Tablespoons butter
1/2 cup sun-dried tomato pesto
3 teaspoons garlic (minced)
1 cup chicken broth
2 cups heavy cream
1 teaspoon Italian seasoning
salt & pepper (to taste)
1 cup parmesan cheese (finely shredded)
2 cups baby spinach
Instructions
Clean and trim chicken tenders. Season both sides with salt, pepper, garlic powder, and paprika.
Heat olive oil in large skillet over medium heat. Add chicken. Cook until golden brown and cooked through. Remove from pan. Let the chicken set for a couple minutes, then slice into large pieces.
Reduce heat to low, add butter to skillet. As the butter melts, use a whisk to dissolve the carmelized bits leftover from the chicken.
Add garlic and sun-dried tomato pesto. Saute and whisk to combine.
Add chicken broth, heavy cream, and Italian seasoning. Salt and pepper to taste. Whisk continuously until the sauce starts to bubble. Slowly whisk in parmesan until completely melted.
Place the chicken, tortellini, and spinach in the skillet. Stir occasionally until the spinach starts to wilt, and let simmer for 5 minutes.
Ideas
I made a large family sized batch of Pan-Fried Chicken Tenders, because I wanted leftover chicken tenders for lunch the next day. We all workout so much, I try to always keep ready to go protein in the fridge.
The original recipe called for 1/2 cup sun-dried tomatoes in oil, drained and sliced thin. I prefer the sun-dried tomato pesto, because I wanted a smooth cream sauce.
This pairs really well with Roasted Panko Parmesan Broccoli.
