Chickpeas with Baby Spinach
Elevating the chickpea beyond hummus
It's the day before grocery day, and I needed a quick vegetable side to go with dinner. Chickpeas with baby spinach to the rescue.
Ingredients
1 can chickpeas
1/2 Tablespoon olive oil
1/2 teaspoon minced garlic
Salt & pepper
1/2 bag baby spinach
Instructions
Rinse and remove the skins from the chickpeas. Set aside.
Heat olive oil over medium heat. Add chickpeas. Salt and pepper. Cook until chickpeas begin to lightly brown. They will pop when they get hot, so watch out for that.
Add garlic and stir. Let garlic cook for a minute or two. Add spinach. Cook until spinach is wilted. Salt and pepper to taste.
