Chili Mac 'n Cheese
Let's take Mac 'n Cheese up a notch!
It may not be the prettiest recipe, but it is really, really good. This recipe caught my eye in a Pillsbury Simple Summer magazine while waiting in line at Costco in 2006. You know if you've been making a recipe for 17 years, it's a keeper.
Ingredients
1 lb lean hamburger meat
2 1/3 cups uncooked rotini pasta
1 teaspoon chili powder
2 1/4 cup hot water
1 can (14.5 oz) zesty chili style diced tomatoes
2 cups colby jack cheese, shredded
salt and pepper to taste
Instructions
In a large skillet, cook ground beef over medium-high heat, stirring frequently and seasoning with salt and pepper, until thoroughly cooked; drain.
Stir in uncooked pasta, chili powder, water, and tomatoes. Heat to boiling, stirring frequently. Redue heat to medium-low; cover and simmer for 10-12 minutes, stirring occassionally, until pasta is tender.
Remove from heat; stir in cheese until melted. Let stand for 3-5 minutes.
Ideas
Don't be afraid to mix and match whatever pasta you have on hand.
