Chocolate Chip Banana Bread
Don't let overripe bananas go to waste!
I'm sitting down to write this first blog post on my new blog as I enjoy the smell of this amazing bread filling the house. I found this recipe years ago on Pinterest. It quickly became a family favorite. If you're ever at my house, and you see three overripe bananas on the counter, this bread is on the menu.
Ingredients
4 Tablespoons Butter
1/4 cup Oil
1 cup Sugar
2 Eggs
1 teaspoon Vanilla
3 Ripe Bananas
1/4 cup Sour Cream
1 3/4 cup Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
3/4 cup Mini Chocolate Chips
Instructions
Preheat oven to 350 degrees.
In large bowl, cream together butter, oil and sugar. Cream for 3 minutes.
Add eggs, vanilla, bananas and sour cream. Stir well until combined.
Stir in flour, baking soda, and salt.
Stir in 1/2 cup mini chocolate chips.
Pour into greased approximately 8.5 x 4.5 x 2.75 inch loaf pan.
Sprinkle with remaining 1/4 cup mini chocolate chips. Also, sprinkle with 1 Tablespoon of sugar on top of bread.
Bake for 45-55 minutes or until toothpick comes out clean. Cover with foil halfway through cooking, approximately 25 minutes to prevent burning.
Let cool for 15 minutes before slicing.
This banana bread freezes well.
Ideas
I like to make this bread as muffins and freeze them for a quick and easy breakfast. Just pop one in the microwave for a few seconds, and you are good to go. This is great options for those busy mornings trying to get everyone out the door and to practice or school.
