Christmas Crack
Chocolate Saltine Toffee
This is hands down Emmy's favorite Christmas treat. It's sweet, it's salty, and it's addictive.
Ingredients
40-45 Saltine crackers
2 sticks salted butter
1 cup brown sugar, packed
1/2 teaspoon vanilla
12 oz. bag of milk chocolate chips
Instructions
Preheat oven to 350F. Line a 11 x 17 baking sheet with heavy aluminum foil and spray with cooking spray.
Place saltine crackers in a single layer on the bottom of the pan.
In a saucepan on the stovetop, combine butter and sugar and bring to a boil while stirring constantly.
Once a boil is reached, reduce the heat and simmer, uncovered, for 3 to 5 minutes or until mixture has thickened some. Take care that your simmer is not too fast/too high because it will be prone to bubbling over or scorching. Stir mixture frequently while it simmers to avoid bubbling over or scorching.
Remove it from the heat, wait 30 seconds, add the vanilla extract and stir.
Pour mixture over the prepared pan with the saltine crackers.
Bake in for 5- 7 minutes, OR until toffee/liquid becomes bubbly.
After removing the pan from the oven, let it rest for 1-2 minutes.
Sprinkle on the chocolate chips and wait a minute for the chocolate to begin to soften. Spread and smooth them into an even layer with a spatula.
Add any additional toppings.
Let cool completely. I always put mine in the fridge to speed up the process and make it easier to break into pieces.

Trust me. Do not skip the step of lining your baking sheet with heavy foil.
We like to add additional toppings after spreading the melted chocolate chips. Suggestions: Heath Bits o' Brickle, Christmas sprinkles, chopped nuts, mini M&Ms, etc.
