Crockpot Rotisserie Chicken

I've found that this crockpot version of baked or rotisserie chicken is a great alternative when you need simple and easy. It’s so moist and tender that it completely falls off the bone when you take it out of the crockpot.
My favorite side to pair with this is Loaded Baked Potato Salad.
Ingredients
1 (5-6 lb) whole chicken
3 teaspoons salt
1 teaspoon smoked paprika
1 teaspoon onion powder
1 1/2 teaspoons Italian seasoning
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
4 whole garlic cloves
1 yellow onion, quartered
Instructions
In a small box, mix together all of the dry seasonings. Set aside.
Clean and prep chicken by removing neck and organs from the chicken.
Place the chicken (breast side down) in the crockpot. Place garlic and onion inside the chicken.
Rub the seasoning mix all over the chicken.
DO NOT ADD ANY WATER.
Cook 4 on high, or 8 hours on low.
Ideas
You can easily adjust the seasonings in the rub to suit your taste. The original recipe calls for thyme. I prefer to substitute additional Italian seasoning instead.
If you have leftover chicken, it makes for a great chicken salad the next day.
