Sometimes Wynn's Louisiana roots come through. He mentioned the other day that he'd like some dirty rice. I found a recipe that is super fast, easy, and really good. I also love a recipe that uses things that I almost always have on hand.

Ingredients

3-4 cups cooked rice
1 pound breakfast sausage
1/2 large red bell pepper, chopped
1 small onion chopped
1/4 teaspoon cayenne pepper
1 tablespoon minced garlic
1 teaspoon smoked paprika
1/2 teaspoon black pepper

Instructions

Precook your rice.

In a large skillet, brown sausage and season with salt and pepper.

While sausage is cooking, add chopped bell pepper and onion. Cook until sausage is browned and veggies are tender. Remove any excess fat with a paper towel.

Add seasonings. Stir.

Add cooked rice. Stir. Add any additional seasonings to your preferred level of spicy.

Ideas

I used 4 cups of long grain brown rice, but any rice will work. I have a very simple rice cooker, so my go to is to throw some brown rice in it an hour or two before making dinner. It comes out perfect and is ready to go by the time I need it.

You can use spicy breakfast sausage, if you like extra heat. You could also kick up the cayenne pepper a bit.
