Simple fried rice is always a favorite and pairs well with so many Asian inspired recipes. If I'm making Eggroll in a Bowl, I always make fried rice to go with it.

Ingredients

3 Tablespoon butter, divided
3 eggs, whisked
1/2 bag shredded carrots
1 small yellow onion, diced
½ cup frozen peas
3 cloves garlic, minced
salt and pepper
4-6 cups cooked rice
3 green onions, thinly sliced
3-4 Tablespoon soy sauce, or more to taste
1 teaspoon toasted sesame oil

Instructions

Heat 1 tablespoon of butter in a large skillet over medium-high heat until melted. Add carrots, onion, peas. Seasnon with a generous pinch of salt and pepper. Saute for about 5 minutes or until the onion and carrots are soft.

Add garlic and saute for another minute.

Move the veggies to one side. Add another tablespoon of butter to the other side, add eggs, and cook until scrambled.

Stir to combine egg and veggies. Make a hole in the center and add the remaining 1 tablespoon of butter. Stir until melted.

Add the rice and stir well.

Add the soy sauce and sesame oil, and stir until combined. Continue stirring for an additional 3 minutes to fry the rice. Add green onions.

Add additional sesame oil, if desired, and remove from heat.

Ideas

For the rice, you can use your preferred rice. I like to make 2 cups of long grain white rice in the rice cooker. This makes approximately 6 cups of cooked rice. You can also make the rice the day before and chill in the fridge over night.

If you have a soy intolerance like I do, you can replace soy sauce with No Soy Soy Sauce. I like the one by Ocean's Halo.

If you're needed an all in one meal and kick up the protein, you can add some seasoned and cubed chicken. Cube 1-2 chicken breasts. Season with salt and pepper and cook in a large skille with a little olive oil until done and starting to brown. Set aside. Wipe out skillet and continue with making the fried rice. Add the chicken when you add the green onions.
