HodgePodge Soup
a crockpot favorite
I got this recipe from a friend of mine a long time ago. It's a our favorite go-to soup. It's so easy. It's just a hodgepodge of cans, some onion, and a pound of ground beef.
I always make sure to have extra of what's needed in the pantry and extra ground beef in the freezer going into winter. Just in case we get stuck and can't get to the store. I can throw this together in the crockpot in a matter of minutes.
Ingredients
2 cans Progresso Minestrone Soup
1 can Italian Recipe Stewed Tomatoes
1 can Rotel diced tomatoes
1 can whole kernel corn
1/2 yellow onion, chopped
1 lb ground beef
Salt & Pepper
Instructions
In a large skillet with a lid, brown the hamburger meat over medium heat. Season with salt and pepper. Halfway thru cooking, add chopped onion. Drain any excess grease.
In a crockpot, empty all of your cans. Add your browned hamburger and onions. Stir.
Cook on high for 4 hours.
Ideas
I like to take about 2 Tablespoons of water and rinse the soup and tomato cans to get all the spices left in the cans. Add to the crockpot.
This is great served with saltines, fresh sourdough, or Mexican Cornbread.
This soup freezes great. I like to freeze it in Ziploc Twist 'n Loc containers They are the perfect size for a quick meal for one.
