Hot Honey Chicken
Not your average school lunch!
School starts back tomorrow, which means we are back into our meal prep routine. I began meal prepping the girls' lunches last year because the school lunches were terrible and having athletes, I wanted to make sure the girls were eating healthy and getting a higher protein lunch.
This meal is one of Em's favorites. It has Hot Honey Chicken, Sautéed Zucchini and Carrots, and Brown Rice/Quinoa with Black Beans.
Ingredients
1 large package chicken tenders, cubed
1 Tablespoon olive oil
4 Tablespoons honey
4 Tablespoons Sriracha
Garlic Powder
Salt & Pepper
Red Pepper Flakes
Instructions
Cube the chicken into bite size pieces.
Cook in a large saucepan over medium heat with olive oil. Salt & pepper to taste.
While chicken is cooking, combine honey, sriracha, garlic powder, salt, pepper, and red pepper flakes. This is all about seasoning to taste and spicy preferences.
When chicken is cooked through and browned, pour sauce over chicken and cook for 1-2 minutes.
Ideas
When meal prepping this, I use 3/4 cups hot honey chicken, 3/4 cups zucchini & carrots, and 3/4 cups brown rice/quinoa with black beans. This gives me 5 healthy lunches ready to go. All the girls have to do is add fresh fruit and a protein cookie or fiber brownie and they are set.
