Lemon Pound Cake
Lemon Glaze, Lemon Cream Cheese Icing, and White Chocolate Drizzle
This pound cake is a fun one. It has a Lemon Glaze, Lemon Cream Cheese Icing, and a White Chocolate Drizzle.
Ingredients
Cake
1 lemon Cake Mix
1 3.4oz box Instant Lemon Pudding
1 cup Sour Cream
4 Eggs
1/2 cup Vegetable Oil
1/2 cup Water
1/2 Tablespoon Vanilla
1/2 Tablespoon Lemon Extract
Lemon Glaze
1 Cup Powdered Sugar
2 Tbs. FRESH Lemon Juice
Lemon Cream Cheese Icing
2 oz Cream Cheese softened
1 Tbs. Butter softened
2 Cups Powdered Sugar
1 Tbs. Heavy Cream
2 Tbs. Fresh Lemon Juice
White Chocolate Drizzle
6 oz White Chocolate Chips
Instructions
Cake
Preheat oven to 350. Grease and flour bundt pan.
Beat all ingredients in large bowl with mixer on low/medium.
Pour into prepared pan.
Bake for 30-40 minutes, or until cake tester comes out clean. Cool in pan for 10 minutes on a cooling rack. Invent pan onto cooling rack. Cool Completely. Once cool, prepare glaze, icing, and white chocolate.
Lemon Glaze
Whisk 1 cup of powdered sugar and 2 Tbs. FRESH lemon juice together and drizzle it over the bundt cake. Since this is a glaze, it will not be thick.
Lemon Cream Cheese Icing
In a small bowl, Beat 2 oz cream cheese and 1 Tbs. butter until well combined.
Beat in the 2 Cups of powdered sugar and 1 Tbs. Heavy Cream.
Beat in the 2 Tbs. FRESH Lemon Juice. Mix until completely smooth. Add heavy cream if needed to reach desired consistency.
Spoon into a 12 oz disposable frosting bag. Snip a small bit off the end of the frosting bag and pipe over the cake in a back-and-forth motion.
White Chocolate Drizzle
Add white chocolate chips to a disposable frosting bag. Microwave in 15-20 second intervals until chips are melted. I take it out and squeeze the bag in between intervals.
Cut the end off the bag and pipe onto cake.
Ideas
Fresh lemons are best. 2-3 lemons will be enough.
I make a custom "cake release" for my pans. In a small bowl, mix together 1/3 cup flour, 1/3 cup shortening, and 1/3 cup vegetable oil. Use a brush or paper towel to coat your baking pan before adding batter and baking.
