Loaded Baked Potato Salad
Taking a classic side up a notch
What's better than a loaded baked potato? Loaded Baked Potato Salad! This is one of my absolute favorite side dishes.
Ingredients
1 bag yellow baby potatoes (1 1/2 lbs)
3 Tablespoons salted butter
1/3 cup sour cream
3 Tablespoon mayonnaise (not Miracle whip)
1/2 cup shredded Colby Jack cheese
3 Tablespoons green onions, chopped
6 strips bacon, cooked crisp and crumbled
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
Instructions
Quarter and boil potatoes in salted water until tender.
Chop green onions. Set aside.
Slice bacon into small pieces and cook until crisp. Set aside.
Drain potatoes. Put potatoes into a bowl with butter. Salt and pepper to taste. Smash with a pototo masher.
Add sour cream and mayonnaise. Stir to combine. Adjust salt, pepper, sour cream and mayonnaise to your preference.
Add half of the shredded cheese. Stir.
Top with remaining cheese, bacon, and green onions.
Ideas
This is one of those dishes that I don't use measurments, so all measurements are approximate. Adjust to fit your taste.
I chop my bacon while it's raw. This lets it cook a lot faster.
This is easily doubled for larger events.
