Loaded Potato Soup
Comfort food at its finest
It felt like we waited forever for the weather to cool off this fall, and when it did, it's been cold ever since. It's a great time to try some new soup recipes. This Loaded Potato Soup is super easy to put together, and it tastes fantastic.
Ingredients
4 medium-sized russet potatoes, peeled and diced
4 cups chicken or vegetable broth
1 cup heavy cream
1/2 cup milk
1/2 cup colby jack cheese, grated
1/4 cup cheddar cheese, grated
2 Tablespoons sour cream
6 strips of bacon, cooked and crumbled
1/2 cup green onions, sliced (plus more for garnish)
1/4 cup butter
1/4 cup all-purpose flour
2 cloves garlic, minced
Salt and pepper, to taste
Instructions
In a large pot and melt the butter over medium heat. Once melted, toss in the minced garlic and sauté until it smells heavenly, about 1 minute.
2Sprinkle in the flour, stirring constantly to create a roux. Season with salt and pepper. Let it cook for about 2-3 minutes until it turns a light golden color.
3Gradually whisk in the chicken broth to avoid lumps. Bring it to a gentle boil.
Add the diced potatoes and reduce the heat to a simmer. Let them cook until tender, about 15-20 minutes.
Stir in the heavy cream and milk, allowing the soup to heat through. No boiling at this point—just let it warm through.
Add some of the grated colby jack and cheddar cheese and the sour cream. Stir to melt and combine.
Season with salt and pepper to taste.
Serve the soup hot, garnished with more bacon bits, green onions, and a sprinkle of cheddar cheese.
Ideas
To save time, grate your cheeses, chop your green onions, and cook your bacon first.
When cooking bacon like this, I like to chop the bacon before cooking it. I line up the slices on a cutting board, and cut across all the slices at once, working my way to the end. The bacon cooks so much faster this way. Let it drain on a paper towel, and it's ready to go on top of your soup.
The original recipe didn't call for sour cream, so feel free to omit that. I wanted it to have a richer more Loaded Baked Potato taste.
