Pumpkin Bread
Fall is in the air!
This morning the temps were in the 50s, and it's September first. It felt like the perfect day to make pumpkin bread.
Ingredients
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups sugar
3 1/2 cups all purpose flour
2 teaspsons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 teaspoon pumpkin pie spice (optional)
Instructions
Preheat oven to 350. Grease 6 mini loaf pans, or 2 9x5 loaf pans.
Whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and pumpkin pie spice together in a large bowl.
In a separate bowl, mix pumpkin puree, eggs, oil, water, and sugar together until well blended.
Slowly add dry ingredients to wet ingredients.
Pour batter into prepared pans.
For 6 mini loaves, bake for approximately 25-30 minutes. For 2 regular loaves, bake for approximately 45-50 minutes.
Ideas
I always make the mini loaves. They cook way faster and make it much easier to share with others.
