Years ago when we lived in Texas, our neighbor owned a cattle farm and sold grass-fed beef. My neighbor suggested using a chuck roast for tacos, and it doesn't disappoint.

Ingredients

2-3 lb chuck roast
1 15 oz jar of salsa verde (medium)
salt and pepper

Instructions

Season your chuck roast with salt and pepper on both sides. Place it in a crockpot.

Pour salsa verde over roast.

Cook on high for 4 hours or low for 8 hours.

Remove from crockpot and shred using two forks. Serve with your favorite tortillas and taco toppings.

Ideas

For extra flavor, sear both sides of the chuck roast before placing in the crockpot.

This typically feeds 4-6, but can easily be halved for a smaller family.
