Sausage and Rice Casserole
Quick and Easy Dinner
Real talk...it's not the prettiest of casseroles, but it's a good one. It's simple and easy and comes together quickly which is great for a busy weekday.
Ingredients
1 lb. pork breakfast sausage
1/2 yellow onion, chopped
3-4 ribs of celery, chopped
1 can cream of celery soup
Salt and pepper
Red Pepper Flakes
2 cups long grain brown rice
Instructions
Prepare 2 cups of long grain brown rice either in a rice cooker on on the stove. Set aside.
In a large skillet, crumble and brown the breakfast sausage. Salt and pepper as it browns. When it's about halfway done, add the chopped onion and celery. Continue cooking until the sausage is cooked through and browned.
Add the can of cream of celery soup and a dash or two of red pepper flakees. Stir to combine.
Add the cooked brown rice. Stir to combine.
Pour the rice mixture into an 8x8 casserole dish. Cover with foil.
Bake at 350 for 15-20 minutes.
Ideas
Feeling spicy, kick up the heat with spicy breakfast sausage.
You can also use any variety of rice. We just prefer long grain brown rice for this one. Just remember that 1 cup of uncooked rice typically yields 3 cups of cooked rice.
