One of the girls loves s'mores flavored snacks. Most recipes that I've found are pretty basic with just graham crackers, chocolate, and marshmallows. I wanted something with a little bit more. I love this recipe because it incorporates a moist but simple cookie layer to bind it all together.

Ingredients

Graham Cracker Layer
9 graham cracker sheets, crushed
6 Tablespoons salted butter, melted
2 Tablespoons sugar

Cookie Layer
1 1/4 cup all purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3/4 cup granulated sugar
1/2 cup salted butter, at room temp
1 teaspoon vanilla extract
1 large egg
1 cup milk chocolate chips
1 cup mini marshmallows
3/4 cup sweetened condensed milk

Instructions

Preheat your oven to 350 degrees. Spray a 9 by 13 inch pan with cooking spray well and set aside.

In a large bowl, mix together the graham crackers, the 6 TBSPs of butter (melted) and the 2 TBSPs of sugar. Press into the bottom of the pan.

In a different bowl, mix together flour, salt, baking powder, sugar, butter, egg, and vanilla.

Very carefully spread the cookie dough mixture on top of the graham cracker crust. The easiest way to do this is to take small amounts, flatten it in your hands, and set it on the crust. You may not be able to entirely cover the graham cracker crust. That's ok. The chocolate chips and marshmallows will fill in any gaps.

Evenly spread the mini marshmallows and the chocolate chips over the top of the cookie dough. Then evenly pour the sweetened condensed milk over the top.

Bake for about 20 minutes or until the edges are golden brown. I cooked mine for 17, and that was probably 2 minutes too long for my oven.

Let the bars cool by popping them in the fridge for about 30 minutes to set before cutting.

Ideas

My oven cooks on the hotter side, which yielded a nice campfire char to the marshmallows. While not the prettiest for presentation, mine had that flavor you get from roasting marshmallows over a fire. For a prettier version, I would either adjust temperature or time down a bit next time.
