Snickerdoodles
This is one of Wynn's favorite cookies. They are soft and chewy with perfect crispy edges.
Ingredients
2 3/4 Cups All Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 Cup Shortening
8 Tablespoons (1 stick) Butter, softened
1 1/2 Cups White Sugar, plus 3 Tablespoons
2 Eggs
1 Tablespoon Ground Cinnamon
Instructions
Preheat Oven to 350º
Sift together flour, baking soda and salt into a bowl. Set aside
With a handheld mixer, cream together shortening and butter. Add 1 1/2 cups sugar and continue beating until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add the flour mixture and blend until smooth.
In separate bowl, mix the 3 tablespoons of sugar with cinnamon.
Roll dough out by hand into 1 1/2" balls. I use a medium cookie scoop. Roll balls into cinnamon sugar. Flatten balls into disks and place evenly on ungreased baking sheet.
Bake until light brown with moist center, 10 to 12 minutes. Cool on wire rack.
Ideas
To get the perfect chewy cookie, you need to "undercook" them. You want them to look soft when you take them out of the oven, so that they collapse as they cool. For my oven, that's 8 minutes of baking.
