Sourdough Discard Cinnamon Quick Bread
breakfast or midday snack
Now that I have two sourdough starters going, I'm looking for different recipes to try using the discard. I threw together this bread in a few minutes this morning. It has just the right amount of sweetness and it has a crispy crust. Perfect for when you want something not too sweet and when you want something quick and easy to make with your sour sourdough discard.
Ingredients
1 1/2 Cups All-Purpose Flour
1 Cup Sugar
1 1/2 Teaspoons Baking Powder
1 Teaspoon Salt
2 Teaspoons Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1 Cup Sourdough Discard
1/4 Cup Milk
1 Teaspoon Vanilla Extract
1/2 Cup Butter, Melted
1 Large Egg
Instructions
Preheat oven to 350°
In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a smaller mixing bowl, combine wet ingredients: sourdough discard, milk, vanilla extract, butter, and egg.
Pour wet ingredients into dry ingredients and stir until just moistened.
Pour batter into a lightly greased 9-inch by 5-inch baking pan.
Bake at for 45-50 minutes or until a cake tester comes out clean from the center.
Let cool in pan on wire cooling rack for 15 minutes.
Use a knife to loosen bread from pan and turn out onto wire cooling rack to finish cooling.
Ideas
The orginal recipe calls for a glaze. We all felt it was sweet enough with out it, and we wanted the option to add a little butter to slice.
If you do want to try a glaze, whisk together 1/4 cup powdered sugar and 1-2 teaspoons of milk. Drizzle over cooled bread.
