Sourdough Discard Little Bites
Chocolate Chip Mini Muffins
Oh. My. Goodness. How cute are these?!
I began a sourdough starter a couple weeks ago. My schedule has not aligned to make a nice loaf of sourdough bread yet, but I was determined to make something with the sourdough discard this morning. This recipe was perfect.
Ingredients
1 cup milk
½ cup sourdough discard
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup sugar
2 eggs
4 Tablespoons melted butter
1/2 teaspoon vanilla
Instructions
Melt butter and let cool.
Whisk milk, sourdough discard, eggs, butter, sugar, and vanilla together in a large mixing bowl until fully combined. Add flour, baking soda, baking powder, and salt. Mix together until the batter is smooth.
Cover and let the batter rest for 10 minutes.
Preheat oven to 350 degrees. Grease a mini muffin pan (this recipe makes about 48 little bites) and spoon in batter.
Do not overfill. Fill about 1/2 to 3/4. Top with mini chocolate chips. They will sink to the bottom.
Bake for 10-12 minutes. Let set for a minute or two before removing from the pan.
Ideas
The orginal recipe called for 2 Tablespoons butter and 2 Tablespoons coconut oil. I didn't have coconut oil on hand, so I just doubled the butter.
Use a cookie scoop to evenly fill the mini muffin cups.
Substitute blueberries or chopped strawberries in place of the mini chocolate chips. Since you will add the berries or chocolate chips to the tops of each batter filld muffin cup, you could make an assortment.
