Taco Pasta Bake
Great for dinner or meal prep.
Nine times out of ten if I ask Emmy what she wants for dinner, she's going to say Taco Pasta. She LOVES this one.
Ingredients
½ box of large noodle pasta (cellentani, penne, rotini, etc)
1 lb of ground beef
1 pkg/envelope of taco seasoning
¾ cups water
½ pkg of cream cheese (about 4oz)
1 1/2 cups shredded cheese (I like colby/jack)
Instructions
Boil pasta until al dente, drain.
Brown ground beef, season with salt & pepper.
Add taco seasoning and water to cooked beef and let simmer for about 5 minutes until the liquid has reduced.
Add the ½ pkg of cream cheese to the beef mixture, stir until melted and combined, remove from heat. Mix in 1 cup of shredded cheese.
Put pasta mixture into your casserole dish or pot, top pasta with remaining 1/2 cup of shredded cheese.
Bake at 350 uncovered for approx 15-20 minutes, or until cheese melts.
Ideas
I like to serve this with black beans and a southwest salad.
This is also a great dish to make when doing meal prep for school lunches.
